Sometimes a cake is described simply by its flavourings; for example Vanilla, Chocolate or Lemon Cake.

Other times, cakes can be described by the nature of their presentation – teacakes or celebration cakes, for example.

Cakes are also classified by the method used to make them. In general, they will fall into one of four categories:

creaming method e.g. vanilla flavoured cake and some fruit cakes; whisking (beating of whole eggs and/ or egg whites) e.g. sponge cakes like the Kenyan version of Black forest; Rubbing method e.g. rock buns and scones; Quick mixing e.g. very rich fruit cakes and some vegetable cakes like carrot cakes.

The main ingredients in most of our cakes are: flour, baking powder, eggs, butter/ margarine, oil, sugar milk, candied fruits, flavourings and essences.

We also understand the need to eat healthy particularly for people who have health conditions that they are managing e.g. diabetics or have allergies to certain ingredients e.g. certain nuts, eggs or have certain food intolerance e.g. wheat or milk intolerance.

For such cases we are able to come up with medically correct recipes to favour them.
